really true as Mike has been working in the hospitality
industry for more than 20 years in a wide variety of
roles in an even wider variety of places from
Gleneagles in Scotland, via luxury liners in the
Caribbean to one of the largest Law firms in the City
of London. Val has been on the receiving end of a wide
variety of hotel and catering experiences, from the UK
to Australia and beyond, in her previous career as a
Banker and Business Consultant. We hope to bring our
breadth of experience to bear to provide a warm welcome
and incomparable standard of comfort for our
guests.

Cottage
The ground floor of the cottage has a Salon with
fully-equipped "coin-cuisine" with cooker, fridge,
microwave, radio/CD player, wood burning stove and door
to sun terrace. There is a washing machine, ironing
board, etc.
Next to the salon is a huge bedroom
with twin 3' beds + optional 3rd bed and cot, and
en-suite shower room with separate WC.
On the first
floor there is a large bedroom with king-size double
bed and en-suite bathroom with bath, shower, WC and
hand basin.

Maître', situated in the pretty canalside village of
Sallèles d'Aude. The high, elegant rooms would have
been used in past times by the vineyard owner for
entertaining local dignitaries and, at the time of the
grape harvest, the workers would take their meals at
trestle tables in the commanding hallways
